Opinion is divided on the Hello Dolly plugin :-) but I thought it might be interesting to start a thread on the plugins you are already using and finding useful. And maybe ideas for plugins you'd like to create?
I'll start off with two:
Akismet - the spam stopper supremo!
I really like Theme Test Drive as a quick alternative to working offline (with MAMP, LAMP, XAMPP et al). Once installed you can build and edit a new theme alongside the "live" theme using your existing content and without affecting users. They can't see the alternative theme unless they're logged in as admin.

Daisy, never heard of the Theme Test Drive...I'll be sure to check that out as I have been tweaking my own theme since 2009 at my blog/news site.
Askimet is also one of my favorites. I don't think I could blog with out it.
I also like WWSGD (what would Seth Godin do) which lets' you put up information for new users coming to your site.
Aside from that I also use the Askimet Site Stats plugin which imho rivals Google Analytics in its quality and depth of site statistics.

If you have a busy site you might want to enhance the core caching of posts and pages. It can use rewrite rules or PHP to serve up stored pages and plays real nice with WP.
Google Analyticator makes Analytics integration easy. Just log into your account, then hit a button in the config screen of the Plugin. With over 1mil downloads and a 4-star rating, it is the popular choice. And who doesn't want a little traffic chart on their dashboard [sarcasm].

I have used several templates where if you do not have a custom field like "thumbnail" included, then there are several broken image links. I have read many stellar reviews about Custom Field Template, and I am beginning to play with it. Seems a bit confusing to learn though.
